A matanza is a giant meal, meant to be enjoyed by a large, extended family or a community, that traditionally involves outdoor cooking of many pork items and side dishes. Highlands University is hosting a matanza in late August at its football stadium with tickets costing $5, but those must be purchased from the NMHU Foundation Office by Aug. 15.

New Mexico Highlands will celebrate its 125th anniversary with a traditional matanza pig roast meal for the community and campus Aug. 25 at the university’s Leveo and Patricia Sanchez Family Stadium  on the NMHU campus.

Matanzas have been part of New Mexican culture and history since the first Spanish conquistadors arrived in the area in the 16th century.
