• Friday, Dec. 3, 1965 — At a special meeting last night, City Council adopted an ordinance providing for annexation of a 44.05 tract of land at the north edge of the City. A petition signed by all property owners within the tract concerned, was presented to the Council by Bill Hanna and John S. Collins who, as a corporation, own about 70 percent of the land. The land, formerly owned by Dick Kierig, lies along the east side of Seventh Street Extension, from near the U.S. Army Reserve building to Lee Drive.

    The New Mexico Environment Department will host several public meetings in various locations around the state in order to share information, answer questions and receive initial public input on the options available for developing a State Implementation Plan in response to the U.S. Environmental Protection Agency’s (EPA) Clean Power Plan. The local meeting will take place at city of Las Vegas City Council Chambers at 1700 N. Grand Ave.

        1 cup butter, softened
        1 cup white sugar
        1 cup packed brown sugar
        2 eggs
        2 teaspoons vanilla extract
        3 cups all-purpose flour
        1 teaspoon baking soda

        2 cups semisweet chocolate chips
        1 cup chopped walnuts

        1/2 cup confectioners’ sugar
        1/2 cup unsweetened cocoa powder
        1 teaspoon vanilla extract
        6 egg yolks
        1/2 cup white sugar
        1/3 cup unsweetened cocoa powder
        1 1/2 teaspoons vanilla extract
        1/8 teaspoon salt
        6 egg whites
        1/4 cup white sugar

        2 2/3 cups white sugar
        2/3 cup light corn syrup
        1/2 cup water
        2 egg whites
        1 teaspoon vanilla extract
        2/3 cup chopped walnuts (optional)

    Butter, for the pan, plus 2 tablespoons chilled and cut into small pieces
    1 refrigerated pie crust (1/2 of a 15-ounce package), room temperature
    4 large cooking apples, such as McIntosh or Granny Smith, peeled, halved and cored
    1 tablespoon fresh lemon juice
    1/4 cup sugar
    1 teaspoon cinnamon
    1 teaspoon cornstarch
    1/3 cup apricot or peach jam or preserves

  • Start to finish: 50 minutes
    Makes 25 to 30

    1/2 cup (1 stick) unsalted butter, divided
    8 ounces mixed mushrooms, finely chopped
    2 shallots, finely chopped
    Kosher salt
    1/2 cup water
    1/2 cup milk
    Ground black pepper
    1 cup all-purpose flour
    4 eggs
    3/4 cup crumbled blue cheese

    Heat the oven to 400 F. Coat 2 baking sheets with cooking spray.

  • Tuesday, Nov. 23, 1965 — The First National Bank in Las Vegas has just completed mailing out over $37,000 in Christmas Club checks to 268 Las Vegans who were able to put aside a small weekly payment so that they would be able to receive this extra money during the Christmas shopping season. Weekly deposits by these individuals ranged from as low as 25 cents to $10 a week or more, with the greatest number of customers paying in $5 each week.

  • Wednesday, Nov. 17, 1965 — Dedication ceremonies for Melody Hall, the recently completed women’s dormitory on the Highlands University campus, will take place Sunday, according to Dr. Thomas C. Donnelly, president of Highlands. The dormitory is named after Gordon E. Melody, state senator from San Miguel County. Melody Hall houses 100 girls and has dining facilities for 200 students. The building and its facilities cost approximately $675,000 and was constructed by W.R. Bauske and Co. of Clovis.
