    But that’s what you get once you venture down the culinary path with bison, an alternative red meat that is showing up at more and more grocers  nationwide. And these massive shaggy creatures are such a delicious — and good for us — meat, it’s worth sorting it all out.

    • Santa Fe National Forest Christmas Tree sales have begun, starting on Nov. 10 through Dec. 24 forest service offices along with various vendors in Pecos and Las Vegas are selling personal-use Christmas Tree permits for $10. Permits may be purchased at Pecos Canyon Station, Griego’s Market, Pancho’s Minute Men Shell Station, Laguna Vista Quick-Stop and at the forest service offices.

    Air Force Col. Joseph L. Torres, Jr. has retired from the U.S. Air Force.  Torres is the Chief of Logistics Readiness Division, Headquarters, Air Combat Command, Joint Base Langley-Eustis, Va.  The Colonel has served in the military for 26 years.  

    He is the son of Joseph L. Torres, Sr. and Priscilla C. Torres of Coronado Drive in Las Vegas.  

    His wife, Angelina, is the daughter of Frances and Jose F. Esquibel also of Commerce Street. They have two children, Rachel and Andrea.

    Highlands University

    The New Mexico Highlands University Madrigal Choir will present A Classical Christmas concert at 3 p.m. on Sunday, Nov. 18 at Ilfeld Auditorium.

    The madrigal choir will perform Christmas anthems, oratorios and compositions by Johann Sebastian Bach, Wolfgang Amadeus Mozart, Henry Purcell, Camille Saint-Saëns, Samuel Barber, and John Rutter.

  • The Mora Independent School Board has hired Tom Sullivan as part-time interim superintendent.

    This is Sullivan’s third stint as interim superintendent for New Mexico schools. Since his retirement he has served in different capacities. In November 2011 he was hired as interim superintendent for the Roy School System. He served in the Santa Fe Schools until June, and now he is serving in the Mora Independent Schools.

  • That big calendar on the wall notes it is almost time to cook that Thanksgiving dinner. How time flies when one is having fun! I bumped into an old friend just the other day, and our talk turned to the holidays, the foods and traditions we all grew up with.
