    Traditional Turkey with Orange Spice Rub

    Wash, dry and brush turkey with oil, giblets removed

    Finely chop fresh sage,orange zest, nutmeg, ground coriander, kosher salt and fresh pepper Sprinkle 1/3 cup spice mixture inside the turkey and sprinkle  the remainder under the skip and all over the turkey

    Place cut orange slices, onion slices and whole rosemary sprigs inside the turkey

    The United States Air Force Academy Band’s Academy Winds will have a performance at 7 p.m. on Tuesday, Nov. 15 at New Mexico Highlands University’s Ilfeld Auditorium. The stop is part of the groups week-long tour of New Mexico.

    The tour will be to perform free public concerts, work with college and high school students, and talk about education opportunities at the Air Force Academy as well as careers in the Air Force.

    • A Veterans Day ceremony is being held at 11 a.m. on Friday, Nov. 11, at Veterans Park. Members of the National Guard’s 720th Transportation Company who served in Desert Storm will take part in the ceremony.

  • Finding the most elite talent from New Mexico Highlands University is the goal of an upcoming event. On Monday evening there will be a battle for the title of Univerity Celebrity. Chris Burns, NMHU Student Senate President, developed this idea to promote and expose the talent at the local university.

    “University Celebrity finds the best college talent,” Burns said. “Other students have talent besides just the athletes.”

    Steak and chimichurri sauce is a classic pairing that is legendary in Argentina. But you don't have to be a gaucho or cowboy to enjoy it.

    There are as many variations of chimichurri sauce as there are stories of where the sauce came from. My favorite story credits English-speaking colonists for speaking in “Spanglish” and asking for sauce with their meals, which they called curry.

    When it comes to finding ways to reduce fat and calories, I favor reinventing a classic recipe rather starting from scratch.

    And many times, that's all it takes. For example, just a little innovation was all that was needed to reinvent an old classic like chicken cordon bleu.
