I really enjoy learning new ideas, new ways to do things. High on this list at the moment is the use of parchment paper to cook things like salmon or chicken. The recipe is so simple and so good. One just places a serving size piece of salmon, (or a chicken breast) on a square of parchment paper. Then one adds sliced onions, thinly sliced lemons and tops it off with a spring of fresh fennel. Bake in a moderate over for 30 minutes or so and you have dinner in a paper dish! The fennel probably wouldn’t work with chicken, but I plan to explore this idea soon.
