I finally got the recipe I have been wanting to post. Last month I asked my other sister, the baker of the family, to give me her sugar-free pecan pie recipe. After hounding her over and over (she was not giving in) I finally gave up. Being the oldest of my siblings, and usually our babysitter when my parents had to run errands, I learned real fast that she is not one to mess with. Well yesterday, she emailed it to me. YIPPY! Maybe the holidays had something to do with this, or perhaps it does pay after all to be an annoying sister.
Thanks again to my sister Chene French for finally giving in. Now all I have to do is get her secrets to the homemade bread she makes every year. Wish me luck!

Holiday Sugar Free Pecan Pie
1 cup sugar free honey
pinch of Salt
1/4 cup sugar substitute (such as Spenda)
1 tablespoon Lemon Juice or Vinegar
4 tablespoons melted Butter
2 teaspoons Vanilla
2/3 cup Pecan Halves
1 (9-inch) Unbaked Pie Shell
1. Preheat oven to 350 F.
2. Carefully crack eggs In a medium bowl, slightly beat eggs with fork.
3. Add sugar free honey, salt, sugar substitute, lemon juice or vinegar, butter, vanilla and mix well.
4. Stir in pecan halves.
5. Pour pecan pie mixture into an unbaked pie shell.
6. Bake 35-40 minutes.
